The Mother of Vinegar is essential because, deep down, it is she who creates Vinegar. It is a gelatinous, viscous (but still beautiful) substance that arises from the transformation of alcohol into acetic acid.
Like any other Mother, it has a lot to say
it consists of a matrix of prebiotics, proteins, enzymes, minerals, polyphenols, vitamins and other compounds produced by friendly bacteria and unfiltered matter.
It first develops on the surface
but then increases in weight (which is perfectly natural) and ends up precipitating and forming the Mother of Vinegar.
